Watermelon Lemonade

Yesterday the kids and I made a yummy, juicy treat: Watermelon Lemonade! There were a lot of fresh lemons involved...

... and the kids helped to squeeze every one of them...

...and loved it!

They were so excited about the process of squeezing all those lemons and pureeing the watermelon, but I think the end result was a disappointment to them. You see, my kids have been accustomed to only the powdery substance that is Country Time lemonade. Therefore, they have no appreciation for the true refinement that is found in the homemade variety.

Might I just say, this was a treat. Cool and sweet, but tart and sassy as well. And the watermelon doesn't overwhelm. Your summer will not be complete until you've tried this:

Watermelon Lemonade

2 1/2 cups fresh squeezed lemon juice (about 15 lemons)
5 cups watermelon puree, strained
2 cups simple syrup*
7 1/2 cups cold water

Stir together and serve over ice, in a pretty glass please. Garnish with a thin watermelon slice or lemon wedge. Makes 1 gallon.

*Simple syrup: Simmer 1 part water with 1 part sugar until dissolved. Allow to cool completely.

You are such a good mom! The thought of letting all my kids make that kind of mess is overwhelming! Sounds yummy, though, thanks for the recipe.
